Advanced Japanese Technology Uses AI for Compassionate Fish Processing, Delivering Prime, Ethically Treated Seafood Nationwide
In the heart of the fishing industry, a revolution is underway. Shinkei Systems, a trailblazing company, is transforming the way fish are caught, processed, and distributed with the help of their AI-based Ikejime robot, Poseidon.
Poseidon, roughly the size of a refrigerator, can be installed directly on a fishing boat with minimal disruption to the normal workflow. Equipped with computer vision, this innovative robot identifies fish species, locates the brain, and performs the Ikejime process - a technique used by Japanese fishermen to instantly and humanely slaughter fish, minimizing stress hormones and bacterial growth - in under seven seconds.
The results are better quality fish, for which fishermen can charge a higher price. This is particularly significant, as approximately 30-35% of global fisheries and aquaculture production is lost or wasted each year.
Saif Khawaja, the founder of Shinkei Systems and the inventor of Poseidon, was inspired to question the current state of the fishing industry while studying at The Wharton School of the University of Pennsylvania. In 2022, Shinkei Systems launched Seremoni, the distribution arm of the company, marking a new chapter in their mission.
Seremoni's products, known as "Seremoni Grade", are wild-caught by American fishermen in American waters and are free of preservatives. They are available through retail shops such as Happier Grocery in New York City, and are used by notable quality-driven restaurants nationwide. Seremoni's offerings go beyond sushi-grade fish, offering a fully traceable supply chain from the moment the fish leaves the water to packing to distribution to your plate.
Seremoni prioritizes fish species that are less frequently seen in grocery stores or on restaurant menus, but are also delicious in their own right. The company partners with a select few processors in the U.S. that are capable of supporting its quality standards and hopes to develop more partnerships with like-minded processing facilities. Currently, Poseidon processes six species of fish, including black cod and rockfish, and plans to expand its offerings to include red snapper and salmon this year.
Poseidon is also equipped with a Starlink satellite for real-time software updates and WiFi access at sea. This ensures that the robot remains at the cutting edge of technology, constantly evolving to meet the needs of the industry.
In June 2025, Shinkei Systems raised a $22 million Series A round, bringing its total funding to $30 million. This funding will be spent to expand its distribution to retailers and commercial fishing vessels, further democratizing access to quality seafood. Seremoni represents a vision to harness technology at every stage of its system, aiming to modernize the fishing industry and bring it up to par with other sectors.
