This versatile recipe, perfect for a health-conscious sweet tooth, yields 2-4 servings and can be customised with various fruits, flavours, and toppings.
To begin, gather your ingredients: ripe mangoes, chia seeds, milk, vanilla extract, heavy cream, powdered sugar, cocoa powder, and toppings of your choice. You'll also need a medium mixing bowl, a small mixing bowl, a fork, plastic wrap, a blender or food processor, a whisk or hand mixer, 2-4 serving containers, 2 piping bags, a paring knife, and a medium tip for the piping bag.
Start by pureeing the mangoes in a blender or food processor. Set aside. In a medium mixing bowl, combine chia seeds, milk, and vanilla extract. Stir until well mixed, then cover the bowl with plastic wrap and refrigerate for at least 30 minutes to overnight, allowing the chia seed mixture to thicken.
While the chia seed mixture chills, whip the heavy cream and powdered sugar in a small mixing bowl until it forms soft peaks. Transfer the whipped cream to a piping bag with a medium tip.
Once the chia seed mixture has thickened, layer each serving container with chia seeds and mango puree. Pipe duck heads made of whipped cream onto each chia seed pudding using the piping bag.
For the eyes, mix leftover whipped cream with cocoa powder and pipe onto the duck heads. Use a paring knife to cut mango into duck beaks and place them on the duck heads.
