Farmer J shares three alluring summer salad recipes from their preferred midday dining spot

Chickpea & Pickles Salad
This vibrant salad serves 2 people and features a zesty lemon tahini dressing. To make the dressing, combine tahini, olive oil, lemon juice, salt, cumin, and a splash of water in a bowl. Stir until smooth and set aside.
The salad includes cooked chickpeas, olive oil, za'atar spice, salt, white cabbage, Lebanese cucumbers, green pepper, shifka pickled chili peppers, fresh parsley, pickled red onion, pickled cucumber, fresh parsley, and sumac.
The pickled red onion is prepared by soaking 1/2 small red onion in a mixture of red wine vinegar, water, and sugar for at least 24 hours in the fridge.
Panzanella Salad
Courtesy of Farmer J, this salad serves 4 people and includes 1/4 medium roasted pepper, 5-6 kalamata olives, 1/2 small spring onion, 1 small cavolo nero leaf, 1/2 small cucumber, 3-4 small heritage tomatoes, sourdough croutons, a small pinch of parsley, 2 leaves basil, salt, and the Panzanella dressing.
The sourdough croutons are made by cutting 2 slices of sourdough bread into cubes, tossing with olive oil and salt, and baking at 190Β°C until golden and crispy.
The Panzanella dressing includes sherry wine vinegar, extra virgin olive oil, cherry or baby plum tomatoes, minced garlic, salt, and pepper.
Feta Caesar Salad
Another crowd-pleaser from Farmer J, the Feta Caesar salad serves 4 people. It includes chopped kale, cavolo nero, romaine lettuce, broccoli, pickled red onion, crumbled pitta chips, and feta cheese.
