To prepare the curry, heat two tablespoons of vegetable oil over medium-high heat. Add a large onion and cook until softened. Then, add three cloves of garlic and an inch piece of fresh ginger, cooking for another minute. Next, stir in two tablespoons of yellow curry powder, one tablespoon each of ground coriander, cumin, paprika, and turmeric, one teaspoon of salt, and a quarter teaspoon of cayenne pepper. Cook until fragrant.

Add 2 lbs. of boneless pork shoulder to the pan, stirring to coat it in the spice mixture. Pour in two cups of chicken or vegetable broth, one 14 oz can of coconut milk, two tablespoons of fish sauce, one tablespoon each of tamarind paste and brown sugar. Bring to a simmer, then reduce heat to low. Cover and cook for 1 to 1 1/2 hours, or until the pork is tender and the sauce has thickened.

For the perfect accompaniment, serve the curry over steamed jasmine rice or sticky rice. To garnish (optional), add sliced red chilies.

Pork shoulder or belly is ideal for this recipe due to their balance of fat and meat, which adds richness and flavor during the slow cooking process. If you prefer, you can cook the curry in a slow cooker for 6-8 hours on low or 4-5 hours on high.
