In a recent interview, Souza discussed the use of Spanish-style chorizo in a recipe for white beans and chorizo with quick-marinated tomatoes and onions. He confirmed that vegan chorizo can be used as a substitute for the traditional Spanish-style chorizo, offering a vegan option for those who wish to enjoy the dish.
Souza acknowledged that vegan meat products often contain a lot of processing and that reading the ingredient labels can feel like going back to chemistry class. However, he also praised the achievements of vegan meat companies, stating that what they have accomplished in creating products that mimic meat is actually quite incredible.
The fat rendered from Spanish-style chorizo is described as orange and beautiful, coating and seasoning the other ingredients in the dish. In contrast, extra virgin olive oil, more expensive and coveted due to its high flavor content, is made by a cold pressing process without any added heat or other processes.
As for the vegan chorizo, the interview did not provide information about the company or person responsible for its development. Regardless, Souza is confident that there will still be a continued audience for vegan options.
