The handover was announced by the old team, including Ulrich Zillig, on social media, expressing their delight at finding "very good hands" to take over their beloved Stadtknecht.
Sebastian Graßmann, a regular customer and full-time employee at a software company, has long harboured a dream of running his own gastronomy business. His family's background in the hospitality industry served as a constant inspiration.
The new proprietor's connection to the location runs deep. Before taking over, he was a regular guest at the venue, and his family's history in the hospitality sector only fueled his passion for the industry.
The gastronomy location in Lichtenfels, previously run by Ulrich Zillig and his business partner, was well-received by the locals. The transition was carried out quietly to ensure a smooth experience for customers. The old team, led by Ulrich Zillig, have now moved to the side of guests, while Sebastian Graßmann takes the helm.
The Stadtknecht 2.0, as it is now known, continues to offer the popular concept that Ulrich Zillig introduced, including regular live concerts. The premises previously housed the Irish pub "Paddy's Rest" before Ulrich Zillig's redesign.
Ulrich Zillig was looking for a new proprietor who would bring new ideas into the existing concept. With Sebastian Graßmann's passion and family ties to the hospitality industry, he seemed like the perfect fit.
Ulrich Zillig wanted to step back to focus on his main job and private life, making way for the new chapter in the Stadtknecht's story. Sebastian Graßmann's dream of owning a gastronomy business has finally come true, and the people of Lichtenfels can look forward to enjoying their favourite spot under new management.
